  • 3-4 pounds of beef chuck roast or goat meat, cut into chunks
  • 5-6 dried guajillo chilies
  • 3-4 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cloves
  • 1 cinnamon stick
  • 4 cups beef broth or water
  • Salt and pepper to taste
  • Corn tortillas, diced onion, cilantro, lime wedges, and salsa for serving

  1. Begin by deseeding the dried chilies and soaking them in hot water for about 20 minutes, until they become soft.
  2. In a blender, combine the soaked chilies, chopped onion, minced garlic, oregano, cumin, cloves, and cinnamon stick. Blend until you have a smooth sauce.
  3. Season the beef or goat meat with salt and pepper, then brown it in a large pot over medium-high heat.
  4. Once the meat is browned, add the chili sauce to the pot, along with the beef broth or water. Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for 2-3 hours until the meat is tender and the flavors have melded together.
  5. Once the meat is cooked, remove it from the pot and shred it using two forks.
  6. Serve the Birria hot, accompanied by warm corn tortillas, diced onion, cilantro, lime wedges, and your favorite salsa.
